This salad is extremely simple, but full of flavor, and what is important, it keeps well in the fridge. A broccoli salad with honey mustard is a great dish in itself, but you can always add something else to it and make a full meal!
If the red onion is too spicy, you can use several chopped green onions in its place. Another option is to soak the red onion for about 5 minutes in ice water.
Instead of dried cranberries, dried cherries, raisins and even chopped dried apricots will work well.
INGREDIENTS
MUSTARD AND HONEY SAUCE
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tbsp mustard
- 3 tablespoons of honey
- 1 teaspoon apple cider vinegar
- 1/8 teaspoon garlic powder
- 1/8 tsp paprika
- 1/8 teaspoon salt
- pepper
SALAD
- 1 large broccoli
- 1/4 red onion
- 1/3 cup almonds in pistils
- 1/4 cup dried cranberry
Prepare the mustard sauce with honey, mixing together mayonnaise, Dijon, mustard, honey, vinegar, garlic powder, pepper, salt and some fresh pepper. Set aside.
Chop the broccoli into small pieces. Finely chop the red onion.
Combine broccoli, onions, almonds and dried cranberries in a large bowl. Add about half the honey mustard sauce and mix. Add more sauce to your taste (broccoli likes to absorb the sauce).
Serve immediately or refrigerate
