A dish that can be a salad, but also a snack, lunch or dinner.
Ingredients
for 3-4 people
- 1/2 head of cauliflower
- 1 sweet potato
- 100g party
- 2 tomatoes
- 50g arugula
- 1/2 teaspoon dried garlic
- 1 teaspoon of thyme
- 1 teaspoon of sweet paprika
- 1 teaspoon of turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon harissa (optional)
- olive oil
- salt and pepper
honey sauce
- 2 tablespoons of olive oil
- 1 teaspoon of mustard
- 1 teaspoon of honey
- 1 teaspoon of lemon juice
- salt and pepper
We preheat the oven to 180 degrees C.
Cut the cauliflower into smaller florets. Cut the potato into cubes. Place on a baking tray lined with baking paper.
In a bowl, mix the dried garlic, thyme, sweet paprika, turmeric, cumin, salt and pepper (and harissa if using). Sprinkle cauliflower and sweet potato with spices, then pour olive oil. Stir gently. Bake the vegetables for about 30-40 minutes until they are soft and golden brown.
We prepare the sauce. Place the olive oil, mustard and honey in a bowl. Season with salt and pepper, mix thoroughly.
Divide the vegetables into 3-4 plates.
Arrange the arugula and diced tomatoes on the plates. Then spread the pieces of cauliflower and sweet potato. Sprinkle the whole thing with feta cheese and pour over the honey-mustard sauce.
