Cuban salad


Preparations for the winter have been made in my family for years. This time, however, a slightly different salad that we prepared last year and we will definitely repeat it in this one. It turned out delicious and is perfect for winter days.


Ingredients


about 10-12 jars of 500ml

  • 1 kg of white cabbage
  • 1 kg of cucumbers (short)
  • 1 kg of tomatoes
  • 1 kg of red pepper
  • 1 / 2kg of onion
  • 1 / 2kg of carrots
  • 250ml of oil
  • 250ml of 10% vinegar
  • 120g of sugar
  • 2.5 tablespoons of salt
  • 20 grains of black pepper
  • 10-12 bay leaves

Chop the cabbage on the mandolin. Sprinkle with half the salt and mix thoroughly.

Clean the peppers and cut them into strips.

Chop the cucumbers on the mandolin, pour boiling water over the tomatoes and peel them, cut them into small pieces.

Peel the onion, cut it into half rings, and grind the carrots in coarse meshes.

Put all the ingredients in a large pot. Add the rest of the salt, sugar, pepper and bay leaves. Pour oil and vinegar, mix thoroughly. Leave the salad for about 1 hour at room temperature.

After this time, put the pot on the stove and bring it to a boil. Cover and cook over medium heat for about 15 minutes.

Then put into 500ml jars. We’re making a tight turn.

We pasteurize for about 10 minutes and let it cool down.
