Duck breast with apples

Currently, preparing a whole duck for two people does not make sense to me. That’s why I decided to prepare a simple, tasty duck breast in apples with a crispy skin.

It came out just perfect and didn’t require a lot of work.


  • 2 single duck breasts
  • 2 apples
  • 1 small onion
  • salt and pepper
  • 1 teaspoon of marjoram
  • 1 bay leaf
  • 1/2 teaspoon thyme

Duck breasts should be at room temperature. Score the skin in each breast ‘checkered’, trying not to damage the meat.

Heat the oven to 200 degrees C.

Put the duck breasts in a cold pan with a thick bottom, skin side down, and fry over medium heat, until the skin is melted – about 12-15 minutes. Then turn the meat over and fry for about 5 minutes.

While the breast is frying, put the apples cut into eights and the onion cut into feathers in a casserole dish. Also add bay leaf, marjoram and thyme.

Place the fried breasts, skin side up, between the apples (but not covering them) and place the dish in the preheated oven.

Bake for about 20 – 25 minutes. Remove to plates and serve with your favorite side dishes, e.g. potatoes and beets.
