There are desserts that are demanding, but also worth the attention. Beza, although it is not a complicated cake, can cause trouble (I burned the meringue myself so I know what I’m talking about).

However, if you try, you will want to repeat this dessert.

My mother loves the Meringue Tracks in my performance, so on the day of her holiday I prepared just this one, with seasonal fruits and a simple cream.

Ingredients

  • 8 proteins (from large eggs)
  • pinch of salt
  • 250 g fine sugar for baking
  • 1 teaspoon of lemon juice
  • 1,5 teaspoon of potato flour

cream

  • 250g mascarpone cheese
  • 500ml of heavy cream
  • 1 teaspoon of powdered sugar

also

  • fruits: strawberries, blueberries, raspberries
  • dark chocolate

We beat the proteins with the addition of salt rigidly.

We add sugar gradually while whisking. We need to get a thick, shiny meringue foam. Add lemon juice and beat. At the end, we have to gently mix the sifted potato flour.

We put meringue on two plates with circles drawn about 24cm in diameter (drawn from the plate).

Put in a preheated oven to 150st. C and immediately reduce the temperature to 120 ° C. Bake for 2 hours until the meringue is baked and crisps on the top. Turn off the oven and leave the meringue to cool.

Now we can take care of the cream. Put mascarpone, fondant and powdered sugar in a bowl and beat until the desired consistency of the cream.

Execution: Place the first table on the pate. We put half the cream lightly spread. Sprinkle with grated chocolate as you like. We put a second table and put the rest of the cream.

We arrange selected fruits. In my case, strawberries, blueberries and raspberries. Sprinkle the whole with bitter chocolate.

Cool in the fridge for a moment and serve immediately.

PS. Can be served with a sauce of sour fruit, such as rhubarb. In this case, stew rhubarb in butter with a small amount of water and rub through a sieve.
