LEBKUCHEN GINGERBREADS

ONE OF THE FAVORITES

Lebkuchen, also known as Lebzelt, are flat cakes made of rye (and wheat) flour, honey, nuts and all kinds of spices, such as cinnamon, cloves, nutmeg, allspice, ginger, coriander, cardamom (gingerbread spice). Particularly noteworthy is the long shelf life of gingerbread. 

Traditionally, I prepare them every year. Orange peel gives a specific flavor, and with icing melts in the mouth. Easy to make, because you do not need to roll and cut out different shapes.

COMPONENTS

  • 150  g  of wheat flour
  • 100  g  of rye flour
  • 3  teaspoons of  gingerbread spice
  • 1  teaspoon of  cinnamon
  • 1  teaspoon  of baking powder
  • 1  teaspoon of  baking soda
  • 200-220  ml of  honey
  • 85  g  butter / margarine
  • 1/2  glass of  chopped orange / lemon peel
  • 100  g  ground almonds  (or 50g almonds 50g walnuts)
  • 2  cups  of powdered sugar  (icing)
  • a few  tablespoons  of lemon juice and water  (icing)

 Dry ingredients: flour, almonds, powder, baking soda, mix spices in a bowl. Honey and butter warm to melting, slightly cool. Pour some lightly warm mass into the dry ingredients, add candied fruit and mix. Stick the cake into the fridge, preferably overnight (hard) Make balls of the size of a walnut and arrange on the baking sheet at greater distances. Flatten with a spoon, preferably moistened. Bake at 180 ° C for about 15 minutes. After cooling, cover with icing. Icing : grate the powdered sugar with lemon juice and water, the amount of juice and water are added gradually to get not too thin consistency

  • 2 glass powdered suga ((icing))
  • few tablespoons lemon juice and water ((icing))
  1. Dry ingredients: flour, almonds, powder, baking soda, mix spices in a bowl.
  2. Honey and butter warm to melting, slightly cool.
