A tasty, nutritious breakfast that gives you energy for the whole day.
Ingredients
for 2 people
- 4 eggs
- 400g canned tomatoes
- 100g chickpeas (from the marinade)
- 100g canned corn
- 2 cloves of garlic
- 30g cashew nuts
- salt and pepper
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- a pinch of dried garlic
Chop the garlic finely and cut the cashews into smaller pieces.
Add all ingredients except eggs to the pan. Stew for a few minutes, about 5 minutes.
Then make four holes and place the eggs in them. Cover with a lid and cook for about 3 minutes.
Serve immediately.
