Gingerbread made by my mother every year. It comes out just as good every year.
We make it for Christmas , but most often we eat it around New Year’s Eve. He can last a long time, coffee is perfect.
Ingredients
- 250g of wheat flour
- 250g of rye flour
- 20 dag of honey
- a glass of sugar
- 4 eggs
- 20g of butter or margarine
- teaspoon of lard
- 30-40g gingerbread spice (or a mixture of gingerbread spices)
- min. 1 cup of dried fruit (preferably 1.5-2 glasses) *
- 1 tablespoon of baking soda
- water
Pour sugar into a saucepan and brown over low heat until it is slightly brown. Pour over 1/2 cup of hot water and ready for a while.
Add honey, margarine / butter and lard. When the ingredients dissolve, let it cool down.
Once cooled down, add the eggs, both flours, baking soda, gingerbread spice and make a dough .
Finally, add the dried fruit sprinkled with a spoon of flour, mix.
Put the dough into a greased baking tray sprinkled with breadcrumbs.
Bake for about an hour in an oven preheated to 160 degrees C.
After it has cooled down, it can be wrapped in cling film and decorated with chocolate glaze and marmalade just before Christmas or New Year’s Eve.
