When there is leftover meat from the broth, it is worth using it to make something tasty, such as dumplings or dumplings.
In this case, I had 2 duck breasts on which vegetable soup was made, and I used the meat to make delicious dumplings.
Ingredients
- 1 kg of potatoes
- 2 – 3 tablespoons of potato flour
- 1 egg
- salt
- additionally: fried bacon or onion to serve
stuffing :
- 2 cooked duck breasts with skin
- 1 onion
- 1 tablespoon of lard
- salt and pepper
Peel the onion, cut into cubes and fry in 1 tablespoon of lard until brown.
Place the cooked chicken breasts in a blender with blades or grind with a grinder until finely ground.
Place the duck meat, fried onion and season with salt and pepper in a bowl. Mix thoroughly.
Peel the potatoes, cook in salted water and then crush them into a puree.
Add potato flour, egg and some salt to the potatoes. Then knead into a uniform dough.
Tear off pieces of dough, flatten it, put the stuffing in the middle and form a ball. If necessary, help yourself with potato flour. Do this with the remaining dough and filling.
Boil a large pot of salted water. Gently insert the dumplings. Cook over low heat for about 10 minutes. Stir gently with a slotted spoon.
Place the dumplings and serve with fried bacon or onion.
