A simple and quick way to prepare sweet potatoes that you can use in many dishes. Diced, they are perfect as filling for enchillades or as part of a salad.
- 2 medium sweet potatoes
- 1 tablespoon of olive oil
- 1/2 teaspoon chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon of salt
Preheat the oven to 190 degrees C.
Line the baking tray with baking paper. Place the diced sweet potatoes in a bowl, pour over the olive oil and spices, then mix.
Bake for about 30 minutes until they are soft.
