Cream soup, filling and tasty. Simple and quick to make, it will warm you up on a cooler day.
Ingredients
- 2 red peppers
- about 400g of sliced tomatoes (1 package)
- 1/2 teaspoon of cumin
- 1 teaspoon of sweet pepper
- 1 onion
- 1 teaspoon of basil
- 750ml of broth
- a pinch of chilli or a piece of fresh chilli
- salt and pepper
- 2 tablespoons of fresh green parsley
- 1 tablespoon of olive oil
- additionally: croutons
Heat the olive oil in a pot and add the finely chopped onion and garlic. We fry for 1 minute.
Add sweet paprika and cumin. Fry for 1 minute.
Add diced red peppers to the pot and pour it over with sliced tomatoes, you can also add chilli as you like. Pour the broth all over it. Cook the peppers until soft.
Finally, add the basil and 1 tablespoon of fresh green parsley. Take it from the oven and blend it into a smooth cream. We put it back on the stove and bring it to the boil.
We try and season with salt and pepper.
Serve with croutons, the remaining parsley and, if desired, a slice of cream.
