Tortellini salad

A fresh and exceptionally delicious tortellini salad will surely please you. It does not take much time to prepare, and you can keep it in the fridge for about 3 days. Perfect for a picnic, barbecue or just dinner on a warm day.


  • 1 & 1/2 zucchini
  • 1/2 teaspoon of salt
  • 1 package of cherry tomatoes (250g)
  • 1/2 red onion
  • 1 small romaine lettuce
  • 1/2 red pepper
  • 1/4 cup grated parmesan
  • 1 package of tortellini (250g)


  • 3 tablespoons of olive oil
  • 1 teaspoon of lemon juice
  • 1 teaspoon of honey
  • 1 teaspoon of mustard
  • salt and pepper
  • 1 teaspoon Provence herbs

Prepare the tortellini. Cook them according to the instructions on the package. Then strain well and cool.

While the tortellini is cooking, cut the zucchini into thick slices and then cut into quarters. Heat a tablespoon of olive oil in a pan. Fry zucchini for a while, season with salt (1/2 teaspoon) until browned. Cool down.

Cut cherry tomatoes in half. Cut the red onion into slices (in half and into slices). Chop the lettuce into smaller pieces.

Place all ingredients in a bowl and mix.

Sauce ingredients: olive oil, lemon juice, honey, mustard, herbs de Provence, mix thoroughly. Season with salt and pepper.

Then add the sauce to the vegetables. Also add the grated parmesan cheese and mix thoroughly.

The salad is ready to be served. Enjoy your meal!
