Sometimes you need a simple but warming and filling soup. Cream of courgette and patison is perfect. For this, the best toasts.
- 1 zucchini
- 1szt patison
- 1pc medium onion
- 2 cloves of garlic
- 1 teaspoon of sweet pepper
- 1 teaspoon of Provencal herbs
- 1/2 teaspoon of cumin
- a small piece of chilli
- 1-1.2 liters of broth
- 2 tablespoons of olive oil
- salt and pepper
Heat the olive oil in a pot and add the diced onion and garlic. Fry until browned. At the end, add chilli, cumin and sweet pepper.
Add diced zucchini and patison to the pot. Fry on low heat for 3-4 minutes.
Pour the broth all over it. Cook until soft for about 25-30 minutes.
We add Provencal herbs and mix.
Blend everything into a smooth cream. Season with salt and pepper.
The cream soup is best served with croutons.
