Ingredients
- 1 bunch of beetroots with beet
- 500 ml of broth
- 400g of Greek yogurt or kefir
- 200g cream 18%
- 3 tablespoons dill
- 2 small green cucumbers
- 1 clove of garlic
- 1 tablespoon of vinegar
Prepare a beetroots: wash, cut beetroot sections, peel them and cut into small cubes. We chop the stalks and leaves of the beetroot.
Boil broth, add beetroot and thicker stalks, cook for about 10-15 minutes, moderate heat, until tender. 5 minutes before the end of cooking, add the remaining leaves. We will cool.
Add yogurt or kefir, cream, half dill, one peeled and cut cucumber to the prepared stock.
Season with crushed fine or chopped garlic, salt, pepper and vinegar or leek. Mix and cool in the fridge.
Serve with feta or egg, the remaining cucumber and dill.
