A delicious healthy soup recipe that is ideal for cozy food
Creamy pumpkin soup consists of simple ingredients that you will probably find in your pantry or store and have such an aromatic taste! It is made without cream, but it is so creamy and only takes a few minutes.
This soup is extremely aromatic, because the onion and apple are fried in butter before adding the pumpkin and everything is cooked in a broth. It really enhances the taste! You really don’t have to add any spices except salt and pepper or exotic ingredients to this soup to make it taste amazing. The simplicity of this recipe and the bold taste of pumpkin make this soup stand out!
If you like, add a spoonful of cream and mozzarella when served, and you won’t need anything else.
Ingredients
- 1/4 cup butter, cut into 4 pieces
- 1 medium onion, finely chopped
- 1 apple, peeled and chopped
- Salt and pepper
- 1.5-2kg pumpkin
- 4 cups of broth
Start by preparing a pumpkin (or use a peeled one): Peel it, remove the seeds and cut into pieces.
In a saucepan, dissolve 1 tablespoon of butter and fry the onion for 2-3 minutes on medium heat until slightly browned.
Add chopped apple and fry for 1 minute. Add the remaining butter and let it melt completely. When the butter melts, season with a little salt and pepper.
Add pumpkin and broth.
Reduce heat, cover the pot and simmer for 30-40 minutes or until all vegetables are soft.
Using a dip mixer, blend the soup. Season with salt and pepper to taste. Add more water or broth as needed.
Serve with rustic bread or cream and cheese.
