In my family, rabbit was always prepared by my grandmother or mother. We usually made it stewed with onion or as ‘paprykar’z, i.e. pepper sauce with cream.
However, this time I went crazy and prepared rabbit legs with vegetables and delicious Spanish chorizo. Truly delicious, original taste.
Ingredients
- 4 rabbit hind legs (or the whole rabbit divided into pieces)
- 150g chorizo
- 1 leek (green part)
- 2 cloves of garlic
- 1 tablespoon of clarified butter
- 200ml dry white wine
- 1 teaspoon of colored peppercorns
- 1 teaspoon of dried thyme
- 2 carrots
- 0.5-0.8l of broth
- 2-3 bay leaves
- 3 allspice
- parsley
- salt and pepper
Clean the green part of the leek and cut it into half slices. Chop the garlic into thin slices.
Heat the clarified butter in a deep frying pan or pot. Add leek and garlic, and after a while season with thyme. Fry for 1-2 minutes.
Salt the prepared rabbit legs and fry them with the vegetables. After browning, turn it over to the other side.
Cut the chorizo into slices and add to the rabbit meat. Be careful not to let the chorizo burn.
Turn the rabbit meat over again and add the wine, bay leaves, allspice and peppercorns. finally add the broth. Stew for about 45 minutes.
Season everything with parsley, salt and pepper.
Serve with baked vegetables, e.g. potatoes and beets.
