I decided on a slightly different form of cookies, a bit healthier. I used wholemeal flour, oat flakes and xylitol instead of sugar.
The cookies are less sweet, but testers, in the form of my niece and nephew, they said they were delicious.
Ingredients
- 160g of oat flakes
- 120g wholemeal flour (wholegrain)
- 160 g of butter or margarine
- 100g xylitol
- 1 egg
- 1 yolk
- 1/2 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
- 80g dark chocolate (or ready-made chocolate drops)
All ingredients should be at room temperature.
Place the oatmeal, wholemeal flour, butter or margarine, xylitol, egg and yolk in the mixer bowl. Beat thoroughly to a uniform cake. At the end, add cinnamon, vanilla extract and chopped chocolate or chocolate drops.
Place the finished dough in a bag and chill in the fridge for 30 minutes.
After this time, preheat the oven to 180 degrees C.
Form walnut-sized balls from the dough. Place on a baking plate with baking paper and flatten with your hands.
Bake for about 15 minutes.
We take out the cookies and let them cool. Enjoy your meal!
