Chopped Brussels Sprouts Salad


Brussels sprout season has started, which I’m happy about. I didn’t like them before (I still don’t like them in soup), but they’re perfect as a salad or warm dish.

This time a delicious salad, made of Brussels sprouts with cranberries and a delicious sauce.

It’s the perfect healthy addition to your meals!


Ingredients


  • 300g Brussels sprout
  • 1 tablespoon mustard (e.g. Dijon or sun-dried tomato)
  • 1 teaspoon of honey
  • 1 tablespoon of apple cider vinegar
  • 3 tablespoons Greek yogurt (or skyr)
  • 2 cloves garlic, finely chopped
  • 2 tablespoons grated parmesan
  • 1/4 teaspoon salt
  • 1/3 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons dried tomatoes, chopped into strips
  • pepper

Remove the outer leaves from the Brussels sprouts and chop them into thin strips. Place in a bowl.

Add to a bowl: yogurt, mustard, honey, apple cider vinegar, garlic, parmesan, salt and pepper. Mix thoroughly.

Add dried cranberries, nuts, dried tomatoes and sauce to the bowl with the Brussels sprouts. Mix and it’s ready.
