A hearty, quick-to-make cottage cheese casserole. Perfect for those on a low-carb, high-protein diet. You can add your favorite ingredients, I present my version.
Ingredients
portion for 1 or 2 people
- 200g light cottage cheese
- 2 eggs
- pepper
- cherry tomatoes
- red onion
- chives
- 40g grated mozzarella
- slices of cold meat (optional)
- favorite spices: oregano, dried garlic, sweet paprika
- salt and pepper
Finely chop the vegetables. Cut the cold cuts (if using) into narrow strips.
Beat the eggs in a bowl, add the cottage cheese, vegetables and mozzarella.
Season to taste and transfer to a baking dish.
Bake in an airfryer or oven for about 25 minutes at 190 degrees Celsius.
We serve it immediately.
