Baked Chicken Thighs in Herbs

Baked chicken thighs served with potatoes and a simple salad make the perfect home-style meal. Nothing complicated, nothing fancy, just simple ingredients to make the classic food we crave.


  • 5 large chicken thighs, skin on the bone
  • 1/4 cup of olive oil
  • 2 cloves of garlic 
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of cumin
  • 2 teaspoons of sweet pepper
  • salt and freshly ground black pepper
  • lime / lemon juice (optional)

Place the chicken legs in a large bowl, add the olive oil, herbs, peppers and garlic. Mix everything so that the spices evenly cover the chicken pieces. Set aside for 1 hour in a cool place.

Preheat the oven to 180 degrees C.

Transfer the drumsticks to the baking sheet with the skin turned downwards. Season with salt and pepper, then turn the skin side up and season with salt and pepper. You can sprinkle it lightly with lime or lemon juice.

Bake in a preheated oven until the skin is golden, about 45 – 50 minutes. If necessary, bake for 2-3 minutes for a crisper skin.

Serve right away with potatoes and salad.!
