Is there anything better than a cucumber salad? The symbol of summer, because who has never eaten cucumbers with sour cream?
The salad below is so fresh and refreshing it only takes a few minutes to prepare it, so it’s the perfect addition to any summer meal. This time paired with red onion.
Ingredients
- 1/2 cup of sour cream (18%)
- 1/2 cup of yogurt
- 2 tablespoons of lemon juice
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 large cucumbers
- 1/3 pc of red onion
- 1/2 teaspoon dried dill (optional)
In a bowl, whisk together the cream, yogurt, lemon juice, sugar and pepper, and dried dill if used. Set aside.
Wash the cucumbers thoroughly and chop them into thin slices, or use a vegetable shredder. Cut the onion into thin crescents.
Place the cucumbers in a bowl. Add salt and mix thoroughly. Set aside for 30 minutes.
After this time, drain the resulting water in the cucumbers. Add the sauce and onion, then mix thoroughly.
Put the salad in the fridge for a few minutes. Stir again before serving.
