The perfect party cake, Victoria Songe Cake is a traditional English baking that everyone will love. It also perfectly harmonizes with fruit, but is also used as an easy wedding cake with only cream.
In my version I present it with rhubarb and apple. Just delicious.
Ingredients
- 250 g butter
- 200 g sugar
- 6 medium eggs
- 1 packet of vanilla sugar
- 250 g of wheat flour
- 2 spoons of baking powder
- 300-400g of rhubarb
- 1 medium apple
- powdered sugar for sprinkling
Prepare all ingredients in advance so that they are at room temperature.
Peel the rhubarb and cut it into equal pieces, as does the apple.
Put butter , sugar and vanilla sugar in a bowl. Beat with a mixer until a light and fluffy cream is formed, and the sugar will be imperceptible.
Then add the eggs one by one. Rub thoroughly each time. Add the sifted wheat flour with baking powder to the dough. Stir gently with a spoon or at low speed of the mixer.
Finally, put about 2/3 rhubarb and 1/2 apple into the dough.
Cover the form with dimensions of approximately 25×36 cm with baking paper. Turn out the dough and align. Sprinkle the remaining rhubarb and apple on top.
Bake for about 45 minutes at 180ºC until a stick is dry. Take it out and let it cool down.
Finally, sprinkle with powdered sugar.
