When testing new forms of stuffing eggs, I came up with such a combination.
- 4 eggs
- 1 avocado
- 6 sun-dried tomatoes in oil
- 1/2 teaspoon sweet pepper
- 1 clove of garlic
- the juice of half a lemon
- salt and pepper
- 1 teaspoon of mustard
Hard-boil the eggs. Let cool, peel, cut into halves and remove the yolks.
Remove the pit from the avocado. Pull out the pulp, put it in a bowl and mash it with a fork.
Add egg yolks, lemon juice, mustard, crushed garlic clove, half a teaspoon of paprika, chopped parsley (about 1 tablespoon) and mash thoroughly.
Cut the dried tomatoes into small pieces. Add to the stuffing with the avocado and eggs. Mix thoroughly. Season with salt and pepper.
Fill the halves of the egg whites with the ready-made stuffing. Garnish with pieces of dried tomatoes.
