Fluffy, soft pancakes that you will definitely like. Delicate in taste, they are perfect for breakfast or brunch with the addition of fruit or peanut/pistachio butter.
Ingredients
- 2 eggs
- 30g spelt/wheat flour or custard flour
- 50 ml skyr (or Greek yogurt)
- 1/2 teaspoon baking powder
- a pinch of salt
- your favorite fruit, nut cream or topping
Place flour, skyr and baking powder in a bowl.
Separate the egg whites from the yolks. Add the yolks to the dry ingredients and mix thoroughly, and beat the egg whites until stiff with a pinch of salt.
Gradually add the egg whites to the remaining ingredients and mix gently.
Fry in a heated, lightly greased pan on both sides over low heat.
Serve immediately with your favorite toppings, I recently used stewed plums and peanut butter.
