Delicious kofra kebab, which you can prepare on an outdoor grill or simply in a griller. Perfectly seasoned, it goes well with a salad on a low-carb diet.
It is best to prepare it on metal skewers, but you can also use wooden or bamboo ones.
Ingredients
- 400g minced chicken (I used chicken thighs)
- 1 finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 cloves of garlic, finely chopped or pressed through a press
- 1/4 cup bread crumbs
- 1 teaspoon ground cumin
- 3/4 teaspoon dried coriander leaves
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cayenne pepper (optional)
In a bowl, place ground chicken, chopped onion and parsley, garlic, breadcrumbs, cumin, coriander, cinnamon, salt, pepper and cayenne pepper (optional).
It is best to use clean, washed hands to thoroughly mix the ingredients until well combined.
Heat a grill pan or outdoor grill. Lightly spray with oil.
Divide the prepared meat into four parts. Place each portion on a skewer, forming an elongated cutlet around the skewer. Prepare 4 koftas this way.
Place the finished meat on the grill. Cook for about 4-5 minutes on one side, flip and repeat on the other side. The skewers should have dark brown grill marks. If they are thicker, keep them on the grill for 1-2 minutes longer.
Serve with rice and your favorite salad or other additions.
