Shortbread cookies that will go well with afternoon coffee.
Ingredients
- 150g of wheat flour
- 100g of oat flakes
- 100g of sugar
- pinch of salt
- 2 teaspoons gingerbread spice
- 1 egg
- 125 g of butter or margarine
We grind the flakes in a blender. Thicker pieces may remain.
Put the flour, sugar, ground flakes, salt, gingerbread spice, egg in a bowl and mix.
Add butter or margarine and knead into a uniform dough. Wrap in cling film and place in the fridge for at least 30 minutes.
Take out the dough, roll it out and cut out your favorite shapes. Transfer to a baking tray lined with baking paper.
Bake for 8-10 minutes at 180 degrees C. Then remove the baking tray and cool the cookies.
Serve dry or sprinkle lightly with powdered sugar.
