A quick and easy dish, perfect for two people or two days. It tastes perfect, you can feel the tomatoes, basil and garlic. Inspired by Italian cuisine.
Ingredients
- 200g chicken breast
- 1/2 onion
- 2 cloves of garlic
- 1/2 red pepper
- 300g tomato puree
- 1 teaspoon dried basil
- 1/2 teaspoon dried garlic
- 1/2 teaspoon sweet paprika
- a pinch of hot pepper (optional)
- 250g ready gnocchi
- 1 tablespoon coconut oil or other oil
- salt and pepper
Finely chop the onion and garlic. Finely dice the chicken breast, and finely chop the red pepper.
Heat oil in a pan. Add onion and fry until lightly browned, then add garlic.
After a while, add the chicken breast. Fry until lightly browned and add the red pepper. Stir occasionally until the pepper is soft.
Add tomato puree to the pan and mix thoroughly. You can also add 1/3 cup of water to make more sauce. Season with dried basil, garlic, sweet paprika, hot paprika if using, salt and pepper. Cover and simmer for about 10 minutes.
At the end add the prepared gnocchi and cook covered for about 3-5 minutes. Can be served immediately.
