Grilled zucchini with arugula, jamon serrano, cheese and pesto



The summer season is the perfect time to eat vegetables. And also for the grill.

The zucchini in this form with the addition of rocket, cheese, jamon serrano ham and pesto is really delicious and filling.


Ingredients


for 4 people

  • 2 pcs. zucchini
  • 80g serrano ham
  • 60g sliced ​​goat cheese
  • 100g of fresh arugula
  • 8 cherry tomatoes
  • chilli pepper (optional)
  • 1 teaspoon of dried basil
  • 90g of ready-made pesto
  • salt and pepper
  • oil for frying zucchini

Wash the zucchini and cut them into slices (lengthwise).

Heat up the grill pan, add a little oil and lay out the zucchini slices. Fry on both sides and put on a plate.

Put the washed and dried arugula on the plates.

Jamon Serrano is torn into smaller pieces and spread on plates.

We add grilled zucchini.

Cut the goat’s cheese into strips and spread it over the zucchini. Add the tomatoes cut into quarters.

Sprinkle everything with dried basil and pour over the pesto.

Season with salt and pepper and fresh chilli if used.

We serve it with bread, e.g. a baguette or croutons.
