Noodles with shrimps and zucchini


At my father’s request, I prepared him prawns. My mother doesn’t eat them and she doesn’t know how to prepare them, so only I can make them for him.

In this case, I used them with vegetables that I had at hand and it turned out, as usual, very delicious, delicately.


Ingredients


  • 300g of selected pasta
  • approx. 15 – 20 medium frozen or fresh prawns (peeled and cleaned)
  • salt and freshly ground pepper
  • 4 tablespoons of butter
  • 2 cloves of garlic
  • 1/2 teaspoon of Provencal herbs
  • 1 pc zucchini
  • 1 pc red pepper
  • 1/3 cup of freshly grated Parmesan cheese

In a large pot of boiling salted water, cook the pasta according to the instructions on the package. Drain, but leave some of the pasta water in the glass.

Prepare the prawns: thaw if you use frozen prawns and clean if needed. Dry it. Season the prawns with salt and pepper to taste; put aside.

Melt 2 tablespoons of butter in a large frying pan over medium heat. Add the finely chopped garlic and fry, stirring frequently, until it smells good, about 1-2 minutes.

Add the prawns and fry, stirring and turning occasionally, until pink in color, about 2-3 minutes on each side. Remove the shrimps from the pan.

Add the remaining 2 tablespoons of butter. Cut the peppers into thin strips and the courgettes into thin half-slices. Fry until browning. Sprinkle with Provencal herbs.

Then add the pasta and Parmesan (set aside 2-3 tablespoons for sprinkling), also add some pasta water (about 1/3 cup). Finally, add the prawns and mix.

Serve immediately, sprinkling the pasta with Parmesan cheese
