Healthy Pumpkin Oatmeal Pancakes


Delicious, healthy pumpkin oatmeal pancakes made with pumpkin puree, oatmeal, spices matching pumpkin. Plus your favorite additions, such as maple syrup, honey or jam and peanut butter.

Pumpkin pancakes recipe that you can prepare directly in a blender!


Ingredients


3 servings of 2 pancakes

  • 3/4 cup pumpkin puree
  • 2 large eggs
  • 2/3 cup unsweetened vegetable milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon of pure maple syrup or honey
  • 1 1/2 cup oat flakes
  • 2 spoons of baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • oil for baking

Put all ingredients in a blender and mix at a high level until full smoothness.

Lightly grease the pan with coconut oil, vegan butter or oil and place on medium heat. When the pan is hot, add about 1/3 cup dough in the pan for each pancake (1/6 of the whole). The dough may be thick, so spread lightly. Bake for 2-4 minutes until the pancakes grow a little and you will see a few bubbles on the edges.

Turn the pies over and bake until golden brown. If it turns out that the pancakes brown too quickly, you need to lower the temperature. If the pan starts smoking at some point, it means the pan is too hot. Wipe the pan clean and repeat with a portion of oil and the rest of the dough.

 A total of 6 pancakes will come out.
