Mini Pavlova with fruits

Pavlova is an Australian dessert, a type of meringue tartlet with whipped cream and toppings.

I present a mini version that can be given to everyone separately.

Crispy from the outside, soft in the middle melts in the mouth, and refreshments add fruit. 

Try Pavlova in the ‘S’ version

Ingredients

 

  • 4  pcs of  proteins
  • 200  g  fine sugar
  • 1  teaspoon of  potato starch
  • 1  teaspoon  of lemon juice
  •  pinch of salt
  • 300  ml of  30% or 36% cream
  •  any fruit
  • 1  teaspoon  of powdered sugar

 In a mixer bowl, beat the proteins to a stiff foam with a pinch of salt. Slowly add batches of sugar, beat them all the time to obtain a stiff foam. Add lemon juice and whip. Finally add sifted potato starch and mix gently. Spread the sheet with paper. Draw four circles with a diameter of about 10 cm. Put meringue on it, in the middle you can make a small hole. Heat the oven to 120ºC. Bake for about 80 minutes. Meringues can slightly crack, should be dry and crunchy on the outside and foam in the middle. Switch off the oven, open the door and let it cool down. Whisk the cream with the addition of powdered sugar. Put into cold meringue. Garnish with fruit and sprinkle with cocoa or grated chocolate. Immediately serve. Enjoy your meal!
