Swedish rhubarb cake

Rhubarb is a seasonal product, vegetable treated like fruit. It is suitable for both sweet desserts and savory dishes.

Ingredients

  • 600 g of rhubarb
  • 3 eggs
  • 150 g of fine sugar for baking
  • 150 g of wheat flour
  • 75 g butter, cold
  • pearl or demerara sugar, for sprinkling
  • 0.5 teaspoons of baking powder (optional)

Rhubarb cut into cubes (I peel, although it is not required)

Form a baking mold with paper (plate about 24x30cm)

Then, beat the eggs with sugar until they triple the volume, and the sugar will dissolve thoroughly. We mix for a long time until the mass will create traces that last for a few seconds.

Add the sifted flour and baking powder slowly and mix.

Put the mass into the mold. Now we can arrange the rhubarb all over the surface.

Spread the tops of butter over the top and sprinkle with pearl sugar.

Bake at 175 ° C for about 40-50 minutes. For a dry stick.

It’s best to serve warm, sprinkled with powdered sugar or with the addition of vanilla ice cream.
