Shortbread cookies filled with your favorite jam. I used my own aronia-plum product, but it can be raspberry or cherry as well.
Ingredients
- 100 g of butter (or margarine)
- 150 g of peanut butter
- 120 g of brown sugar
- 1 packet of vanilla sugar
- 1 egg
- 200 g of wheat flour
- 1/2 teaspoon of baking soda
- favorite jam
Remove all ingredients in advance, they should be at room temperature.
Place the margarine, peanut butter, vanilla sugar, and brown sugar in a bowl. Beat with a mixer until a light, fluffy mass is obtained.
Then add the egg and mix thoroughly. Then gradually add flour mixed with baking soda. Beat until the ingredients are thoroughly mixed. Cover the dough and refrigerate for one hour.
Prepare the baking trays. Preheat the oven to 180 degrees C.
Take the cake out of the fridge. Form into walnut-sized balls, then flatten and make a thumb hole. Place on the plate.
Fill each cookie with your favorite jam.
Bake for about 10-12 minutes until browned. Cool on the grille.
