A bit of summer stuck in the jar.
Peaches are my favorite summer fruit (along with nectarines). Hence the idea of closing them in a jar to be able to enjoy their sweet taste in the middle of winter.
I admit that I use Dżemfix to make sure that they last a long time.
Ingredients
- 3 kg of peaches
- 1 kg of sugar
- the juice of one lemon
- 2 pcs Dżemfix / Żelfix 3:1
Peel the peaches, remove the stones and cut them finely into a pot / saucepan with a thick bottom.
We add sugar and lemon juice.
We boil, if foam appears, collect it and reduce the heat. Boil the jam until the jam thickens and stir it regularly so that it does not burn.
At the end, add Dżemfix if used, mix thoroughly and cook for another 5 minutes.
Pour it still warm into jars. We pasteurize for 15 minutes. (I always pasteurize it out of habit, so I can be sure that they will be good).
