Tradition and cucumber salad must be… A standard salad prepared for several dozen years in my house, in the same way. Just in time for winter.
Salad goes well with dinner, e.g. braised beef.
- 3 kg of cucumbers
- 1 kg of onion
- 1/2 kg of carrots
- 2 tablespoons of salt
- 1 flat teaspoon of ground pepper
- 1/2 cup of vinegar
- 1/2 cup of oil
- 1 tablespoon of sugar (optional)
Peel and slice the cucumbers and onions, and peel and grate the carrots on a coarse grater.
Sprinkle with two tablespoons of salt and mix thoroughly. Leave for an hour.
Then strain, add a level teaspoon of ground pepper, 1/2 cup of vinegar, 1/2 cup of oil and 1 tablespoon of sugar (if using to break up the taste of vinegar).
Mix everything, fill the jars.
Pasteurize by cooking 15 minutes after boiling.
