Tomato soup with baked tomatoes and meatballs

The best recipe for homemade tomato soup with roasted fresh tomatoes, peppers, garlic, caramelized onions and, for example, meatballs. This soup recipe is full of flavor and the best way to use up fresh tomatoes! 

Once you try it, you’ll never want to go back to any other version of the soup.


Ingredients


  • 2 kg of tomatoes cut in half (e.g. lime)
  • 4 peeled garlic cloves
  • 3 tablespoons of olive oil
  • 2 sprigs of basil
  • 1 teaspoon dried oregano
  • freshly ground salt and pepper
  • ½ tablespoon of olive oil
  • 2 onions, cut into thin slices
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • 2 cups of water or broth, depending on how thick you want the soup
  • extra salt and pepper

meatballs

  • 500 g of minced turkey meat
  • 1 stale roll (e.g. kaiser rolls)
  • 1 onion
  • 1 egg
  • salt and pepper
  • optional: breadcrumbs
  • oil or lard for frying

Preheat oven to 180 degrees C. Line a large baking sheet with parchment paper. Place the halved tomatoes and garlic cloves on a baking sheet, drizzle with 3 tablespoons of olive oil. Season generously with salt and pepper and dried oregano. Also add 2 sprigs of fresh basil. Bake in the oven for approx. 60 minutes.

While the tomatoes are baking, prepare the onions: add 1/2 tbsp olive oil to a large pot and place over medium heat. Add the onion slices and stir to coat the onion with the olive oil. Fry stirring from time to time. Check the onion every 5-10 minutes until it is completely caramelized and turns golden. This should take about 20 minutes.

After roasting the tomatoes and garlic, let them cool down for a while, then add them to the pot with the onions and use a blender to blend until smooth. Then add dried basil and oregano, mix thoroughly. 

Set to medium heat, add stock or water and season with salt and pepper to taste. Boil.

Serve with rice, croutons or meatballs.


Meatballs:

Pour the bread with milk or water, let it soak for a few minutes. press. 

Put the minced meat, grated onion, a teaspoon of salt and 1/2 teaspoon of pepper and the squeezed roll into a bowl. Then add the egg and mix thoroughly with your hand.

Form small balls, roll in flour or breadcrumbs and fry briefly in oil or lard until golden.

Serve with soup or your favorite sauce.
