Ingredients
4 servings (portion approx. 110 kcal)
- 250g Greek yogurt or natural skyr
- 2 eggs
- 40g oat flour (or 20g oat flour and 20g corn flour)
- 1/2 teaspoon baking powder
- 80g strawberries and rhubarb
- 3 tablespoons of erythritol
Place eggs, erythritol and yogurt in a bowl and mix thoroughly. Then add oat flour and baking powder.
Pour the batter into a small baking dish. Top with sliced strawberries and rhubarb.
Bake at 180°C for about 30 minutes. Divide into 4 parts and enjoy!
