A way to use cottage cheese in a slightly different, filling way. A breakfast perfect for eating straight away or to go. Delicate, tasty and nutritious.
Ingredients
for 1 person
- 2 eggs
- 200g cottage cheese
- 40g spelt flour
- 1/3 teaspoon baking powder
- a pinch of salt
- additions: fresh fruit e.g. strawberries, yoghurt/protein pudding
Separate the whites from the yolks.
Place the yolks in a bowl, add the cottage cheese, spelt flour and baking powder. Mix thoroughly.
In a separate bowl, beat the egg whites with a pinch of salt until stiff.
Gently combine the foam with the remaining ingredients.
Heat the pan, gently add spray oil. Spoon the batter into pancakes. Once browned on one side, slowly flip to the other.
Serve with fruit, yoghurt or protein pudding, whatever you like.
