Baked beetroot, sweet potato, and feta

Delicious starter, snack, lunch or just dinner. Tasty, nutritious and full of aromas. Something light and pleasant on the palate.

What do you need Beetroot, sweet potato, serrano and cheese, plus herbs and spices. Just yummy!

  • 2 pcs. Long beets or 3 pcs. Round
  • 1 pc. Sweet potato
  • 1/4 of the red onion
  • 100g of feta cheese
  • 50g of Parmesan cheese
  • 3 Jamón serrano slices
  • 2 tablespoons of oil
  • 2 teaspoons of thyme
  • 1 teaspoon of basil
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • 1 teaspoon of French mustard
  • 1 teaspoon of Provencal herbs
  • 1 teaspoon of sweet pepper
  • 1/2 teaspoon hot pepper
  • salt pepper
  • lemon juice

Preheat the oven to 180 degrees C.

Wrap the beets in foil and put them on the baking tray.

Thinly slice the sweet potato and place it next to the beets. Drizzle with oil, sweet paprika, 1 teaspoon of thyme, herbes de Provence, hot pepper and salt. Place a clove of garlic next to it.

Put the tray in the oven. Bake for 20 minutes. After this time, turn the sweet potato slices and bake for another 10 minutes. Take the sweet potatoes from the baking tray together with the garlic. Bake the beets for an additional 30 minutes, they should be soft, but slightly firm.

Crush the garlic, add the olive oil, basil, French mustard, thyme, salt and pepper. Season to taste with lemon juice and mix thoroughly.

Slice the peeled beetroot and put it on plates. Put the sweet potato slices on them and spread the serrano ham, which is shredded into smaller pieces. Pour the prepared sauce over it.

Sprinkle the diced red onion, shredded feta cheese and grated Parmesan cheese.
