Tasty and simple salsa. Sweetly spicy, with a hint of acidity thanks to lemon juice. The beetroot gives the sweetness, and the jalapeno gives it some spiciness. Adjust the amount of jalapeno to yourself.
Salsa perfect for tacos or dinners.
Ingredients
- 1 pc of baked beetroot
- 1 pc tomato
- 1/2 pc of red onion
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 3 tablespoons of chopped parsley
- jalapeno (amount at the discretion and degree of spiciness)
- salt pepper
If we do not have a baked beetroot, we have to prepare it. Bake the beetroot in the oven. Wrapped in foil at 180 degrees C for 50 minutes.
Cut the cooled beetroot into small cubes. Similarly, cut the tomato and onion into small cubes. Place the ingredients in a bowl.
Add the olive oil, lemon juice and parsley. Slice and add jalapeno as desired and on the level of spiciness.
Season with salt and pepper.
