Delayed, but here it is. On St. Martin (November 11), I prepared goose legs. Since only two portions were needed, the legs were enough instead of the whole goose.
Below is a simple recipe for delicious drumsticks with orange.
Ingredients
- 2 goose legs
- 3 tablespoons of oil
- 2 tablespoons of balsamic vinegar
- 1 large or 2 small cloves of garlic
- 1/2 teaspoon of dried savory
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon dried thyme
- 1/4 teaspoon chili (peppers cayenne)
- salt and pepper
- 2 sprigs of rosemary
- 1 orange
Wash the goose legs thoroughly and dry them. We lightly cut the skin.
We prepare the marinade. In a bowl, place oil, balsamic vinegar, crushed garlic cloves, and herbs: savory, tarragon, thyme, chilli, salt and pepper. Mix thoroughly.
Coat the goose legs with the prepared marinade and set aside for 4-12 hours (preferably overnight).
Preheat the oven to 170 degrees C.
Heat a frying pan (without fat) and place the marinated goose legs in it. Fry on both sides for 5 minutes on each side.
We have two options:
The legs can be placed in a baking bag along with the rendered fat, rosemary and orange pieces. Tie the ends securely.
Or place in a baking tray lined with baking paper, cover with rosemary and orange segments and cover with aluminum foil (as I did).
Place and bake for 1.5 hours. Remove the foil (or cut the bag) for another 15 minutes to brown the legs.
Serve with red cabbage and potatoes.
