Delicious pasta in the style of the southern United States, more specifically Louisiana. The pasta is spiced with the Cajun spice that is so characteristic of the region. Plus crispy chicken with panko and Parmesan cheese. It may not have much to do with what we find in New Orleans, but we can serve something similar on our plate.
You will definitely like spicy noodles and the delicate flavor of crispy coated chicken. Good luck. (reduce the amount of cajun spice if necessary)
Ingredients
- 500g chicken breast (or chicken tenderloin)
- 1 cup of Panko
- 1 cup of grated Parmesan cheese
- 4 tablespoons of olive oil
- salt and black pepper
- 400g of short pasta
- 1 yellow onion
- 1 red pepper
- 2 cloves of garlic
- 3 teaspoons of cajun spice *
- flakes of red pepper
- 2 glasses of milk
- 1/2 cup of heavy cream or canned coconut milk
Boil water in a large pot. Cook the pasta according to package directions. Drain leaving some water from underneath the pasta in a glass or mug.
Meanwhile, mix Panko with half of the Parmesan cheese. Coat the chicken on both sides in the Panko mixture, pressing down on the batter. Put the chicken on the plate. Put aside
Heat 2 tablespoons of olive oil over medium heat. Add chopped onion and fry until tender, 2-3 minutes. Add the diced paprika and chopped garlic, fry another 5 minutes, until the peppers are tender.
Then add the cajun spice and a pinch of red pepper flakes, salt and pepper. Fry for a minute more, until the spices are fragrant, then reduce the heat and slowly pour in the milk and cream. Stir until smooth. Boil the sauce slightly, cook for 5-8 minutes until it thickens slightly.
Prepare the chicken. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Add chicken and fry until golden brown, about 3-4 minutes. Turn the chicken over and cook until golden brown on the other side for another 3-4 minutes. Transfer to a cutting board and cut into thin strips
Add Parmesan to the sauce. Add the noodles, mix and cook for 3-5 minutes. If necessary, add a little water from under the noodles so that the noodles are not too dry.
Divide the pasta into plates and place the chicken next to it. Enjoy your meal!
*Cajun spice:
mix 2 1/2 tablespoons smoked paprika, 2 tablespoons garlic powder, 1 tablespoon onion powder, 1 tablespoon dried oregano, 1 tablespoon dried thyme, 1 tablespoon chili powder, 1 tablespoon cayenne pepper, 1 1/2 tablespoons salt and 1 a tablespoon of black pepper. Close everything in a jar.
