Coffee pancakes

Today’s recipe is inspired by two pillars of French and Italian cuisine: pancakes  and  cannoli  . We added some coffee to the first one to get aromatic pancakes, and from the second we took a delicious filling. The result was a decidedly surprising combination! 

Coffee pancakes are a recipe for real connoisseurs, ideal for preparing for the most demanding palates that are not satisfied with the classic stuffing . 

The finish with a coffee glaze completes the whole.

Components

 

  • 400  g  milk
  • 350  g  wheat flour  (preferably 00)
  • 100  g  mocha coffee
  • 3  pcs of  eggs
  •  salt
  •  butter  (optional)

Filling

  • 500  g  of riccotta cheese
  • 150  g  sugar
  • 50  g  dark chocolate

Sauce

  • 150  g  dark chocolate
  • 70  g  mocha coffee

To prepare pancakes with coffee, first prepare mocha coffee: you need about 200 g. Pour half of the coffee (100 g) into a jug, which you have already poured milk into. Put the rest away, it will be used to prepare the sauce. In the bowl, break the eggs, then add the mixed milk and coffee and combine together. Then sift the flour directly into the bowl and mix with a whisk. Add a pinch of salt and stir vigorously to obtain a smooth and homogeneous dough. Cover and leave for 30 minutes in the fridge. In the meantime, make the filling: roughly chop 50 g of dark chocolate and add it and sugar to ricotta. Put in the fridge. Now make the sauce. Chop the dark chocolate. Heat the remaining coffee until it boils. Then pour the coffee on the chocolate and stir until it dissolves. The sauce will harden, so heat it slightly before serving. Time for pancakes. Heat the pan, brush with butter and pour in a dipper. Spread the dough evenly and bake for about a minute. When classic bubbles appear on the surface and the edges leave, turn and bake on the other side for about half a minute. Continue this way until all the pancakes are baked. Take ricotta cream and spread on half the pancake. Fold it in half and then half in half to get the triangle. Fill it all up, heat the chocolate sauce and use it to decorate the pancakes before serving. Enjoy your meal!
