The simplest zucchini pancakes – 2 ingredients

While on a diet, I eat various interesting things, and most importantly: they are tasty. I limit carbohydrates, but they are present in my diet to a lesser extent.

I present the simplest zucchini pancakes.


Ingredients


portion for 1 person

  • 100g zucchini
  • 2 eggs
  • pinch of salt
  • 1 tablespoon of oil (optional for frying)

Wash the zucchini and grate it finely. Set aside for 10 minutes. After this time, squeeze out excess water.

Add 2 eggs and a pinch of salt to the zucchini. Mix thoroughly.

Heat the pan. We can add oil or spray oil (or without, if you have a non-stick pan). Place a portion of the dough with a spoon, and in this case I get 6 pancakes. Fry for about 2 minutes on one side (until the egg is set) and turn over to the other side (about 2 minutes).

Serve alone or with your favorite fruit.
