A salad that will work well at a party, barbecue or lunch. The best of young, small potatoes. However, I slimmed it down a bit by adding Greek yoghurt.
Ingredients
- 1 kg of smaller potatoes
- 1 red onion
- 6-8 pickled or low-salt cucumbers
- 2 tablespoons of mayonnaise
- 2 tablespoons of Greek yogurt
- 1 teaspoon of hot mustard
- salt and pepper
- 100g of smoked bacon or bacon (optional)
Wash the potatoes thoroughly. Boil in salted water and not peeled until soft. We cool it down and do not peel it.
After the potatoes have cooled down, cut them into thicker cubes.
Dice the cucumbers, and dice the onions. Place the potatoes, cucumbers and onions in a bowl.
Optional: Dice the bacon or bacon and fry it in a pan until browned. We cool it down.
Add yogurt, mayonnaise and mustard to the bowl with potatoes. Mix thoroughly and season with salt and pepper. If used, add the fried bacon and mix thoroughly.
We cool in the refrigerator for an hour.
