Hogao is one of the most popular sauces, also used as a condiment in the Colombian cuisine. Hogao is used as the basis for many typical Colombian dishes or simply as a sauce or supplement ‘arep’. It can be stored in the fridge for up to a week.
In Colombia there are different versions of this sauce, and this is a recipe according to the grandmother of one of the bloggers.
Ingredients
- 3 tablespoons vegetable oil
- 1 glass chopped onion
- 2 cups chopped fresh tomatoes 2pcs
- 1 clove of garlic chopped
- 1 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Preheat the oil in a pan, add tomatoes, onions, garlic, cumin and dill for 10 minutes, stirring until softened.
Reduce the temperature to a low level, add salt and cook for another 10 minutes, stirring from time to time until the sauce thickens. Season to taste with pepper and salt if you need it.
