MEXICAN SCRAMBLED EGGS – HUEVOS A LA MEXICANA

Scrambled eggs are the perfect breakfast for everyone. The Mexican version is perfect for the weekend.This breakfast is filling and stimulating. The sharpness of the pepper in combination with tomato and eggs works perfectly.

It goes perfectly with tortilla, fried beans and cheese, which every man will love. If you do not have tortilla and fried beans, try the hot, fresh toast.

Ingredients


  • 1  pcs  tomato
  • 1/8  pcs of  onion
  • 1  pc  jalapeno peppers  (optional different)
  • 4-6  pcs of  coriander  (parsley)
  • 5  pcs of  eggs
  •  salt
  •  pepper
  • 1-2  tablespoons of  oil  (extra butter)
  •  green pepper  (optional)

Chop finely the jalapeno and onions. Rinse and finely chop the coriander (or if you do not have this parsley) Get rid of the tomato seeds. Finely chop the rest, season to taste with salt and dry on towel paper Mix 5 eggs together Fry the onions and peppers in olive oil lightly (you can add butter if you like) Add eggs, season with salt and pepper. Cook over medium heat often stirring Just before the end, add tomatoes and coriander. Stir well and fry for an additional minute Try, season to taste if necessary salt. 

Serve immediately and enjoy the taste

* you can add another pepper if you do not have one, and if you need it add green pepper like me

** can be served with warm tortilla, beans and cheese
