The easiest way to make these delicious mushrooms, which I served with an egg-only omelette and vegetables, but you can also serve it with a baguette or bread toast.
Ingredients
- 250 g oyster mushrooms
- 3 tablespoons of olive oil
- chopped parsley (about 1-2 tbsp)
- 2 cloves of garlic
- salt and pepper
- a pinch of chilli (optional)
- 4 eggs (2 small omelette or 1 large)
- Parmesan for sprinkling
Rinse oyster mushrooms slightly and pat dry, then cut into smaller pieces.
Heat the oil in a pan, then add the mushrooms. Fry over low heat for 3 minutes.
Add chopped garlic cloves and parsley, season with salt and pepper and mix thoroughly. Fry the mushrooms until browned. You can add a pinch of chilli.
Put a small amount of fat in a separate pan. Beat the eggs with a fork with a pinch of salt and pour into the pan. Fry like an omelette or pancake, turning after about 2 minutes.
Put the omelet on the pan. Then add oyster mushrooms and sprinkle with grated parmesan.
