Fluffy pancakes that taste exactly like a slice of your favorite banana bread. Simple, perfectly sweet, dairy-free and easy to prepare.
- 1 cup of whole grain flour (or wheat flour)
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- a pinch of nutmeg
- 1/4 teaspoon of salt
- 2 ripe bananas
- 1 egg
- 1 teaspoon of almond or vanilla extract
- 1/2 cup of plant-based milk
- chopped dark chocolate
In a bowl, combine flour, baking powder, cinnamon, nutmeg and salt.
In a large bowl, puree the bananas, then add the egg, vanilla, and almond milk. Everything should be smooth and well mixed.
Add dry ingredients to wet ingredients and mix until everything is well combined.
Preheat the pan. Brush lightly with butter or coconut oil. Place portions of dough in the pan and spoon them a little to create patties. Sprinkle with chocolate chips immediately if you use them.
Fry until bubbles appear on top, about 2 minutes. Turn the pancakes and fry until golden brown for another 2 minutes.
Repeat with the next portions of dough, making about 8 pancakes in total.
