crunchy on the outside and soft on the inside
Carrot pancakes and cauliflower pancakes are a tasty and colorful dish that can be served for breakfast, lunch or a snack!
The recipe is simple and we can use the remains of vegetables in the fridge. At least I did, because the cauliflower remained from another day and I had to use it somehow.
The dish is nutritious and tasty, and even better with garlic sauce or yogurt.

Ingredients
- 1 pcs zucchini
- 1/3 pieces of cauliflower
- 1 piece of carrot
- 3 pcs eggs
- 2 tablespoons flour
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- green parsley
- olive oil
Using the grater, grate the zucchini and place on a sieve, sprinkling with salt. Leave for 10 minutes. Chop the cauliflower finely. Wipe the carrot. Cut the parsley. Place all ingredients (with eggs, flour, pepper) in a bowl. Squeeze the grated zucchini to drain the excess liquid. Combine with the other ingredients. Preheat the large pan. They will coat it with olive oil. Place a portion of the mixture in a pan and gently press it down with a spatula to form a cake. Repeat the process with the others. Fry in golden-brown color (about 3-4 minutes on each side). Move to the plate. Repeat until the meatyanin is over. Serve with yogurt or garlic sauce. Enjoy your meal!
